  • 2 pieces large eggs
  • 1/2 cup mixed diced tomatoes, onions, capsicum
  • 1 small green chili
  • 1 tsp oil or ghee
  • 1 slice whole-wheat bread
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp turmeric
  • 2 tbsp chopped cilantro

Instructions

Crack the eggs into a mixing bowl. Add salt, pepper, and turmeric, and whisk together until well combined.

In a non-stick frying pan, heat 1 tsp of oil or ghee over medium heat. Add the mixed diced tomatoes, onions, capsicum, and the optional green chili. Sauté for about 3-4 minutes, or until the vegetables are lightly softened.

Pour the whisked eggs over the sautéed vegetables in the frying pan. Reduce the heat to low and let it cook undisturbed for about 5-6 minutes, or until the edges are set and the top is nearly cooked.

Sprinkle chopped cilantro over the omelette. Using a spatula, gently fold the omelette in half. Cook for another minute to ensure the inside is fully set.

Toast 1 slice of whole-wheat bread in a separate pan or toaster until golden brown.

Serve the warm masala omelette with the toasted whole-wheat bread on the side. Optionally, garnish with extra cilantro or a side of pickle for additional flavor.
