In a mixing bowl, crack the 2 large eggs, and beat them with a fork until frothy. Add the chopped tomato, finely chopped onion, pinch of cumin, salt, and pepper to taste. Stir to combine everything well.
Heat 1 teaspoon of vegetable oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet, swirling it around to evenly distribute. Cook until the edges start to set, about 1-2 minutes.
Gently lift one edge of the omelette with a spatula to check if the bottom is set. Once it is, fold the omelette in half, and continue to cook for about 1 more minute or until fully set.
In a small bowl, mix 2 tablespoons of low-fat yogurt with a pinch of salt, pepper, and the chopped fresh cilantro. Stir until well combined to make the spiced yogurt.
Toast the whole-wheat bread slice in a toaster until golden brown.
Serve the omelette immediately with the spiced yogurt on the side and the toasted whole-wheat bread. Enjoy your meal!
