In a mixing bowl, crack open the 2 large eggs and beat them lightly with a fork or whisk.
Add the mixed diced tomatoes, onions, and capsicum to the eggs. If desired, finely chop the small green chili and add it to the mixture for extra spice.
Season the egg mixture with salt, pepper, and turmeric. Stir in the chopped cilantro and mix well to combine all ingredients evenly.
Heat 1 tsp of oil or ghee in a non-stick skillet over medium heat.
Pour the egg mixture into the skillet. Spread it evenly. Cook for 3-4 minutes, or until the eggs begin to set around the edges.
Use a spatula to carefully flip the omelette and cook the other side for an additional 2-3 minutes until fully cooked and golden brown.
While the omelette is cooking, place the slice of whole-wheat bread in a toaster and toast to your desired level of crispness.
Once cooked, slide the omelette onto a plate. Serve with the toasted whole-wheat bread on the side.
