Slice the chicken breast into thin strips (about 1 cm thick).
Season the chicken strips with 1 tbsp of fajita seasoning, salt, and black pepper. Mix well to coat evenly.
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add the chicken strips to the skillet and cook for 5-7 minutes, stirring occasionally, until they are cooked through and golden.
Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers and onion.
Sprinkle the remaining 1 tbsp fajita seasoning over the vegetables, add a little salt, and cook for 5-7 minutes until the vegetables are softened and slightly caramelized.
Return the chicken to the skillet and mix with the vegetables until heated through. Adjust seasoning if needed.
Warm the tortillas in a dry skillet or in the microwave for about 30 seconds until soft.
Assemble the fajitas by placing a portion of the chicken and vegetable mixture onto each tortilla.
Add a spoonful of guacamole and a drizzle of sour cream or Greek yogurt if using.
Garnish with fresh cilantro and serve with lime wedges.
