Slice the chicken breast into thin strips.
In a large bowl, combine the chicken strips with 2 tbsp of fajita seasoning, a pinch of salt, and a pinch of black pepper. Mix well to coat the chicken evenly.
Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
Add the seasoned chicken strips to the skillet. Cook for about 5-7 minutes until the chicken is cooked through and slightly golden. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onion. Sauté them for about 5-7 minutes until they are tender-crisp.
Return the chicken to the skillet with the sautéed vegetables. Toss everything together to heat through and combine the flavors, about 1-2 minutes.
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side or use a microwave to heat them quickly.
Assemble the fajitas by dividing the chicken and vegetable mixture evenly among the tortillas. Add a dollop of guacamole and sour cream or Greek yogurt (if using). Garnish with fresh cilantro and a squeeze of lime juice.
