Preheat your grill to medium-high heat.
Season the pork tenderloin generously with salt and black pepper. Rub 1 tablespoon of olive oil over the surface.
Place the pork tenderloin on the grill. Cook for about 15-20 minutes, turning occasionally until the internal temperature reaches 145°F (63°C). Once cooked, remove, cover with foil, and let it rest.
Peel and cube the potatoes. Place them in a pot with enough water to cover them, add a pinch of salt, and bring to a boil. Reduce the heat and let the potatoes simmer for about 15-20 minutes or until fork-tender.
While the potatoes are cooking, trim the ends of the green beans and set aside.
Once the potatoes are tender, drain the water and return them to the pot. Add 3 tablespoons of butter and 1/4 cup of milk. Mash until smooth. Season with salt and pepper to taste.
In a large pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the green beans and sauté for about 5-7 minutes, or until tender-crisp. Season with salt and pepper to taste.
To serve, slice the pork tenderloin into medallions. Plate alongside mashed potatoes and sautéed green beans. Enjoy!
