Preheat your oven to 400°F (200°C).
In a small bowl, mix together the minced garlic, chopped herbs, salt, and black pepper. Rub this mixture all over the pork tenderloin.
Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Once hot, add the pork tenderloin and sear each side for about 2-3 minutes until browned.
Transfer the skillet to the preheated oven and roast the pork tenderloin for about 15-20 minutes or until the internal temperature reaches 145°F (63°C).
While the pork is roasting, heat the remaining tablespoon of olive oil in another pan over medium heat. Add the green beans and sauté them for about 5-7 minutes until they are bright green and tender-crisp.
Season the green beans with salt and pepper to taste.
Warm the mashed potatoes in a saucepan over low heat, stirring occasionally until heated through.
Once the pork is done, remove it from the oven and let it rest for about 5 minutes before slicing.
Serve the sliced pork tenderloin with a side of mashed potatoes and sautéed green beans.
