Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a bowl, toss the sweet potato wedges with 1 tablespoon olive oil, salt, and pepper. Place them on one side of the prepared baking sheet.
In a small bowl, mix the breadcrumbs, chopped parsley, and lemon zest. Season the salmon fillets with salt and pepper, then press this mixture onto the top side of each fillet to form a crust.
Place the crusted salmon fillets on the other side of the baking sheet with the sweet potatoes. Bake in the oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork, and the sweet potatoes are tender.
While the salmon and sweet potatoes are baking, heat 1 tablespoon of butter or olive oil in a frying pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the green beans to the frying pan and cook for 5-7 minutes, stirring occasionally, until they are tender but still crisp. Season with salt and pepper to taste.
Once everything is cooked, plate the salmon, roasted sweet potatoes, and sautéed green beans together. Garnish with additional fresh parsley if desired before serving.
