Ingredients

  • 800 g plain Greek yogurt
  • 300 g mixed berries
  • 120 g nut-free oat & sunflower-seed granola
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • Optional for garnish mint leaves

Instructions

In a small bowl, mix the 2 tablespoons of honey and 1 teaspoon of vanilla extract until well combined.

In a large mixing bowl, add the 800g of plain Greek yogurt. Pour the honey and vanilla mixture over it and stir until the yogurt is evenly flavored.

Wash and gently pat dry the mixed berries. If necessary, hull and slice the strawberries. Ensure you have an even mix of strawberries, blueberries, and raspberries.

Divide the granola evenly into four portions, roughly 30g (about 1/2 cup) each, to top each parfait.

In four serving glasses or bowls, layer the parfait as follows: Start with a quarter of the Greek yogurt mixture (200g) at the bottom of each glass.

Next, add a layer of mixed berries over the yogurt layer, using about 75g of berries in each serving, ensuring an even distribution of the different berries.

Sprinkle approximately 30g of nut-free oat & sunflower-seed granola over the berries in each glass.

Optional: Garnish with fresh mint leaves for an added touch of color and flavor.

Serve immediately or refrigerate for up to 2 hours before serving to keep the granola crunchy.
