Wash the fresh spinach under cold water to remove any dirt or debris. Pat dry with a paper towel and roughly chop it into smaller pieces.
In a medium bowl, crack and beat the 4 large eggs with a fork or whisk until well blended. Season with salt and pepper to taste.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Allow the oil to heat for about 1 minute.
Add the chopped spinach to the skillet and sauté for about 2-3 minutes, or until wilted and bright green.
Pour the beaten eggs over the sautéed spinach in the skillet, gently stirring to distribute the spinach evenly into the eggs.
Sprinkle the 1/4 cup of crumbled feta cheese evenly over the eggs.
Cover the skillet with a lid and let the omelette cook undisturbed for about 3-5 minutes, or until the edges start to set and the top is slightly firm.
Once the omelette is cooked through, use a spatula to carefully fold it in half. Let it cook for an additional minute, then transfer it to a plate.
Serve the omelette warm, garnished with additional pepper if desired.
