In a large bowl, combine the ground lamb, cumin, and coriander. Add salt and black pepper to taste. Mix well until all the spices are evenly distributed throughout the meat.
Divide the lamb mixture into 8 equal portions. Form each portion into an oval-shaped kofta around a skewer (if using) or simply shape into patties.
Preheat a grill or grill pan over medium-high heat and brush lightly with some olive oil to prevent sticking.
Grill the koftas for about 4-5 minutes on each side until nicely charred and cooked to your preferred level of doneness. Remove from heat and let rest.
While the koftas are grilling, prepare the cauliflower 'tabbouleh'. In another bowl, combine the riced cauliflower, chopped parsley, diced tomato, and diced cucumber.
Dress the cauliflower mixture with lemon juice and the remaining olive oil. Add salt and pepper to taste, and mix well to ensure the flavors are combined.
Serve the grilled lamb koftas alongside the cauliflower 'tabbouleh'. Garnish with a sprig of parsley if desired, and enjoy!
