In a mixing bowl, combine the ground lamb, ground cumin, ground coriander, salt, and black pepper. Mix well with your hands or a spoon until the spices are evenly distributed throughout the meat.
Take small portions of the lamb mixture and form into oblong shapes around wooden or metal skewers. Ensure they are packed tightly so they stay on the skewers during cooking.
Preheat a grill pan or barbecue to medium-high heat. Cook the lamb skewers for about 4-5 minutes on each side until browned and cooked through.
While the lamb is cooking, steam the cauliflower florets until tender, about 8-10 minutes. Alternatively, microwave them in a bowl with a little water for the same amount of time.
In a bowl, mash the steamed cauliflower with extra-virgin olive oil. Season with salt and pepper to taste.
Warm the roasted carrots lightly in a pan or microwave.
