Preheat your oven to 400°F (200°C).
Place the miso-glazed cod fillet on a baking sheet lined with parchment paper or lightly greased foil. Bake in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
While the cod is baking, heat 1 tablespoon of sesame oil in a pan over medium heat. Add the cooked soba noodles, 1 tablespoon of soy sauce, and 1 teaspoon of rice vinegar. Sauté for 2-3 minutes until everything is well combined and heated through.
Slice the scallions thinly. Add the sautéed or steamed bok choy to the pan with the noodles and mix well. Cook for another 2 minutes until the bok choy is warmed.
Season the soba noodles and bok choy with salt and pepper to taste. Stir in most of the sliced scallions, reserving a bit for garnish.
Once the cod is cooked, remove it from the oven and let it rest for a minute. Plate the soba noodle and bok choy mixture.
Place the baked miso-glazed cod fillet on top of the soba noodles and bok choy. Garnish with the reserved scallions and sprinkle 1 teaspoon of sesame seeds over the dish.
