In a medium-sized mixing bowl, combine the plain Greek yogurt with 1 teaspoon of vanilla extract. Stir well until the vanilla is evenly mixed into the yogurt.
Wash the mixed berries thoroughly under cold running water. Pat them dry using a clean towel. If berries are large, such as strawberries, consider slicing them into smaller pieces.
In four serving glasses or bowls, start by adding a layer of Greek yogurt at the bottom of each. Use approximately 1/4 cup of yogurt per glass.
Add a layer of mixed berries on top of the yogurt layer in each glass, using about 1/4 cup of berries per glass.
Drizzle a little honey over the layer of berries in each glass.
Add a layer of granola, using about 2 tablespoons per glass, on top of the berries and honey.
Repeat the layering process: another layer of Greek yogurt, followed by mixed berries, a drizzle of honey, and a sprinkle of granola until the ingredients are used up, ending with granola on top.
Garnish each parfait with a couple of fresh mint leaves, if using. Serve immediately or refrigerate until ready to serve.
