Cook the pasta in a large pot of boiling salted water according to the package instructions until al dente. Drain and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3 minutes.
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 5-6 minutes. Drain any excess fat.
Reduce the heat to medium, add the milk to the skillet and bring to a gentle simmer. Add the cheddar cheese gradually, stirring constantly, until melted and smooth.
Return the cooked chicken to the skillet. Add the drained pasta, salt, and black pepper. Stir well to combine, ensuring the pasta is evenly coated with the cheese sauce.
Cook on medium heat for another 2-3 minutes until everything is heated through.
Serve the cheesy pasta hot, garnished with chopped parsley if desired.
