Ingredients

  • 200 g pasta
  • 300 g mixed vegetables (bell peppers, zucchini, carrots)
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 50 g parmesan cheese
  • to taste N/A salt
  • to taste N/A black pepper

Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.

While the pasta is cooking, chop the mixed vegetables into bite-sized pieces. Mince the garlic cloves.

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the mixed vegetables to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.

Add the cooked pasta to the skillet with the vegetables. Toss everything together, adding a little pasta water if the mixture seems dry.

Season with salt and black pepper to taste. Remove from heat and transfer to serving plates.

Shave or grate the parmesan cheese over the top of each serving. Serve immediately.
