Preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C).
Season the pork chops with salt, black pepper, garlic powder, and dried thyme. Let them rest at room temperature while preparing other ingredients.
Slice the bell peppers and onion into strips. Cut the potato into thin wedges.
In a large bowl, toss the potato wedges with 1 tablespoon of olive oil, a pinch of salt, and black pepper. Spread them in a single layer on a baking sheet.
Place the potato wedges in the oven to bake for about 20 minutes or until golden brown and tender.
While the potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and peppers, sautéing for about 8-10 minutes until they are soft and slightly caramelized. Stir occasionally to prevent burning.
Place the seasoned pork chops on the grill. Grill each side for about 4-5 minutes or until the internal temperature reaches 145°F (63°C). If using the oven, sear the pork chops on a hot pan for 2 minutes on each side, then transfer to the oven for 10 minutes to finish cooking.
Once cooked, remove the pork chops from the grill or oven and let them rest for 5 minutes before serving.
Melt butter over the sautéed peppers and onions and stir well. Serve the grilled pork chops with the sautéed peppers, onions, and baked potato wedges on the side.
