Boil water in a large pot and cook the pasta according to the package instructions until al dente. Drain and set aside.
Chop the onion and garlic finely. Dice the tomatoes into small pieces.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until fragrant and the onion becomes translucent, about 3-4 minutes.
Add the beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 8-10 minutes.
Stir in the diced tomatoes, salt, black pepper, oregano, and basil. Let it simmer for about 10-15 minutes, until the tomatoes soften and the flavors meld together.
Add the cooked pasta to the skillet and toss to combine everything evenly.
Sprinkle the cheese over the pasta and beef mixture. Turn off the heat and cover the skillet for a few minutes to allow the cheese to melt.
Serve hot, garnished with additional basil or oregano if desired.
