Cheesy Tomato Pasta

By Lindsey Strickland

Total: 25 minutes
Main CourseVegetarian

Ingredients

  • 4 medium tomatoes
  • 250 g pasta
  • 100 g cheese
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 10 g basil
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

1

Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Drain and set aside.

2

Dice the tomatoes into small cubes. Mince the garlic and roughly chop the basil leaves.

3

In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

4

Add the diced tomatoes to the pan and cook for 5-7 minutes until they begin to break down into a sauce. Season with salt and black pepper.

5

Add the cooked pasta to the pan with the tomato sauce. Toss to combine, allowing the pasta to absorb some of the sauce.

6

Grate the cheese and add it to the pan. Stir until the cheese melts and coats the pasta evenly.

7

Add the chopped basil to the pasta and mix well. Adjust the seasoning according to taste.

8

Serve the pasta hot, garnished with additional basil or cheese if desired.
