Grilled Vegetable & Hummus Wrap

Ingredients

  • 4 large Whole-wheat wraps
  • 2 cups Grilled vegetables
  • 1.5 cups Hummus
  • 1 head Lettuce
  • 1 large Cucumber
  • 1 whole Lemon
  • to taste optional Salt
  • to taste optional Pepper

Instructions

Prepare the lettuce by washing and drying it, then tearing it into bite-sized pieces.

Thinly slice the cucumber into rounds. Set aside for later use.

Take the whole lemon, roll it on the counter for a few seconds to loosen the juices, and cut it in half. Squeeze the juice into a small bowl, removing any seeds.

Lay out the whole-wheat wraps on a clean surface or cutting board. Spread about 3 tablespoons of hummus evenly over each wrap, leaving a small border around the edges.

Divide the grilled vegetables equally among the wraps, placing them in the center over the hummus layer.

Add a handful of lettuce and a few slices of cucumber over the grilled vegetables on each wrap.

Drizzle about 1 tablespoon of freshly squeezed lemon juice over the fillings of each wrap. Season with salt and pepper to taste if desired.

Fold in the sides of the wrap and then roll it from the bottom up to encase the fillings securely. Repeat with the remaining wraps.

Cut each wrap in half diagonally for presentation, if desired. Serve immediately or wrap tightly in foil for later consumption.
