Classic Vanilla Custard

By Amie Hastings

Total: 45 minutes
DessertCustardBaking

Ingredients

  • 4 large eggs
  • 1/2 cup sugar
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

1

Preheat your oven to 325°F (160°C). Prepare a baking dish by placing a kitchen towel at the bottom to prevent the custard cups from sliding.

2

In a medium saucepan, heat the milk over medium heat until small bubbles form around the edges. Do not let it boil.

3

In a separate bowl, whisk together the eggs, sugar, and salt until well combined and slightly thickened.

4

Gradually add the hot milk into the egg mixture, whisking constantly to temper the eggs and prevent them from curdling.

5

Stir in the vanilla extract until fully incorporated.

6

Pour the custard mixture into oven-safe custard cups or ramekins, and place them in the prepared baking dish.

7

Fill the baking dish with hot water until it reaches halfway up the sides of the custard cups to create a water bath.

8

Carefully transfer the baking dish to the preheated oven and bake for 30-35 minutes, or until the custards are set and a knife inserted into the center comes out clean.

9

Remove the custards from the oven and let them cool at room temperature for a few minutes before transferring them to the refrigerator to chill completely.

10

Serve the custards chilled, optionally garnished with fresh fruit or a sprinkle of nutmeg.
