Ingredients

  • 8 oz pasta
  • 2 cups mixed vegetables (zucchini, bell peppers, broccoli)
  • 2 tbsp olive oil
  • 1/2 cup Parmesan cheese
  • 2 cloves garlic

Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, following the instructions on the package, usually about 8-10 minutes. Drain the pasta and set aside.

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add minced garlic to the pan and sauté for 1 minute until fragrant. Be careful not to burn the garlic.

Add the mixed vegetables (zucchini, bell peppers, broccoli) to the skillet. Sauté for 5-7 minutes until the vegetables are tender-crisp.

Add the cooked pasta to the skillet with the vegetables. Toss to combine and heat through.

Season the pasta and vegetables with salt and pepper to taste. Toss to coat the ingredients evenly.

Remove the skillet from the heat and sprinkle grated Parmesan cheese over the pasta. Toss gently to melt the cheese and combine.

Serve the Pasta Primavera hot, garnished with additional Parmesan cheese if desired.
