  • 2 slices whole-grain bread
  • 0.5 per person ripe avocado
  • 1 per person large egg
  • 1 teaspoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon chili flakes
  • 1 teaspoon olive oil
  • 1 tablespoon white vinegar

Instructions

In a small saucepan, bring water to a gentle simmer and add 1 tablespoon of white vinegar. This helps the eggs hold their shape while poaching.

Crack the egg into a small bowl, ensuring the yolk stays intact.

Create a gentle whirlpool in the simmering water with a spoon. Carefully pour the egg into the center of the whirlpool. This technique helps the egg white wrap around the yolk neatly.

Poach the egg for about 3-4 minutes, or until the white is set, but the yolk remains soft. Remove the egg using a slotted spoon and let it drain on a paper towel.

While the egg is poaching, halve the avocado and remove the pit. Scoop out the flesh into a bowl and mash it with lemon juice, salt, pepper, and chili flakes.
