Begin by mincing 2 cloves of garlic and grating a 1-inch piece of ginger.
Heat 1 teaspoon of vegetable oil in a large pan or wok over medium-high heat.
Add the minced garlic and grated ginger to the hot oil, stirring for about 30 seconds to release their flavors.
Increase the heat to high and add the lean beef strips to the pan. Stir-fry for about 3-4 minutes until the beef is browned and cooked through. Remove the beef from the pan and set aside.
In the same pan, add the mixed stir-fry vegetables (bok choy, carrots, bell pepper). Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Return the beef to the pan with the vegetables. Add 1 tablespoon of soy sauce and 1 teaspoon of sesame oil to the mixture. Season with salt and pepper to taste. Stir everything together to combine.
Add the 2 cups of cooked egg noodles to the pan. Toss everything together for another 2 minutes until the noodles are heated through and coated with the sauce.
Serve the stir-fry hot, garnished with additional sesame seeds and chopped green onions if desired.
