  • 1 cup mixed berries

In a medium bowl, whisk together the almond milk, honey, vanilla extract, and a pinch of salt until the honey is fully dissolved.

Add chia seeds to the bowl and stir well to combine, ensuring there are no clumps.

Cover the bowl or transfer the mixture into a jar and seal it with a lid. Place it in the refrigerator to chill overnight, or for at least 4 hours, to allow the chia seeds to expand and the mixture to thicken.

Before serving, give the pudding a good stir. If it's too thick, add a little extra almond milk to reach the desired consistency.
