Mixed Berry Chia Pudding

By Caitlin Howard

Total: 2 hours 10 minutes (including chilling time)
DessertVeganVegetarianGluten-FreeBreakfast

Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk
  • 2 tablespoons honey
  • 1 cup mixed berries
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

1

In a medium-sized mixing bowl, add 1/2 cup of chia seeds and 2 cups of almond milk.

2

Add 2 tablespoons of honey, 1 teaspoon of vanilla extract, and 1/8 teaspoon of salt to the chia seeds and almond milk mixture. Stir until well combined.

3

Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it sit for at least 2 hours, or overnight for best results, so the chia seeds can absorb the liquid and thicken into a pudding consistency.

4

Before serving, stir the chia pudding to ensure even consistency.

5

Divide the chia pudding into serving bowls or cups. Top each serving with a generous amount of mixed berries (approximately 1/4 cup per serving).
