Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
In a large skillet, heat the olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes, until they are tender-crisp.
Add the cooked pasta to the skillet with the vegetables. Sprinkle with Italian seasoning, salt, and pepper. Toss to combine and heat through for an additional 2-3 minutes.
Serve the pasta primavera hot, topped with freshly grated Parmesan cheese to taste.
