Start by preparing the tomato soup. Heat 1 tablespoon of olive oil in a large pot over medium heat.
Add diced onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
Add chopped tomatoes to the pot and cook for another 5 minutes.
Pour in the vegetable stock, add salt and pepper to taste, and let it simmer for 15 minutes.
Use an immersion blender to puree the soup until smooth, then season with cumin, chili powder, and a pinch of sugar. Adjust seasoning to taste.
While the soup is simmering, prepare the burger quesadillas. Heat a skillet over medium-high heat and add the remaining olive oil.
Cook the ground beef until browned. Season with salt, pepper, cumin, and chili powder. Remove from heat and set aside.
Grate the cheddar and mozzarella cheese and mix them together in a bowl.
Layer one tortilla with some of the cheese mixture, a portion of cooked beef, and more cheese on top. Cover with another tortilla.
Melt butter in a clean skillet over medium heat. Place the quesadilla in the skillet and cook until the cheese is melted and the tortillas are golden brown, about 3 minutes per side.
Remove from skillet and cut into wedges. Repeat the process with the remaining tortillas and fillings.
Serve the burger quesadillas warm with the tomato soup on the side.
