Preheat your oven to 200°C (390°F).
Peel and cube the sweet potato into uniform pieces for even cooking.
Place the sweet potato cubes in a baking dish. Drizzle them with half of the olive oil, and season with salt and pepper. Toss well to coat evenly.
Spread the sweet potato out in a single layer and place in the oven. Roast for 15 minutes.
While the sweet potatoes are roasting, prepare the salmon. Place the salmon fillet on a piece of foil. Drizzle with the remaining olive oil, squeeze the juice of half a lemon, and season with salt and pepper.
Mince the garlic clove and sprinkle it over the salmon. Add the chopped fresh dill or parsley.
After the sweet potatoes have roasted for 15 minutes, remove the baking dish from the oven.
Add the green beans to the baking dish with the sweet potatoes. Toss with a bit of salt and pepper.
Place the foil-wrapped salmon beside the vegetables in the baking dish or on a separate baking sheet.
Return the baking dish to the oven and bake the salmon and vegetables together for an additional 20-25 minutes, until the salmon is cooked through and the sweet potatoes are tender.
Check that the salmon is done by ensuring it flakes easily with a fork.
Remove everything from the oven. Serve the baked salmon with the roasted sweet potatoes and green beans on a plate.
