Thinly slice the garlic cloves and the onion. Cut the red bell pepper into strips.
Slice the shrimp sausage into 1/2-inch thick rounds.
Heat olive oil in a large skillet over medium heat.
Add the garlic and onion to the skillet and cook until the onion is translucent, about 3-4 minutes.
Add the red bell pepper strips and cook for another 2 minutes.
Add the sliced shrimp sausage to the skillet and cook until browned and cooked through, about 5-6 minutes.
Season with cayenne pepper, salt, and black pepper. Stir well to combine.
Sprinkle chopped parsley over the dish before serving.
