Seared Steak with Garlic Mashed Potatoes

Ingredients

  • 500 g Potatoes
  • 2 pieces Ribeye steak
  • 3 cloves Garlic
  • 4 tbsp Butter
  • 1/2 cup Whole milk
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 sprigs Fresh thyme

Instructions

Peel and dice the potatoes into 2-inch cubes. Rinse them to remove excess starch.

Place the potato cubes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil over high heat.

Once boiling, reduce heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes. Drain well.

While the potatoes are cooking, season the steak with salt and pepper on both sides. Let them sit at room temperature for 15 minutes.

In a small saucepan, melt 2 tbsp of butter over low heat and add minced garlic. Cook until fragrant, 1-2 minutes. Do not brown.

Return drained potatoes to the pot. Add the garlic butter, remaining 2 tbsp of butter, and whole milk. Mash until smooth. Add salt to taste.

Heat olive oil in a large skillet over medium-high heat. When hot, add the steaks.

Sear the steaks for 3-4 minutes on each side for medium-rare, adjusting time for desired doneness. Add thyme sprigs during the last minute.

Remove steaks from the skillet and let them rest for 5 minutes. Meanwhile, slightly tilt the skillet and spoon some of the juices over the resting steaks for added flavor.

Serve the steak with a generous portion of garlic mashed potatoes on the side.
