In a medium bowl, crack open 4 large eggs and whisk them until the yolks and whites are fully combined. Season with salt and pepper to taste.
Wash 1 cup of fresh spinach thoroughly and chop it coarsely. Set aside.
Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat up for about 1 minute.
Add the chopped spinach to the skillet and sauté for about 2-3 minutes until the spinach is wilted and tender.
Pour the whisked eggs over the sautéed spinach in the skillet. Tilt the pan gently to ensure the eggs are evenly distributed.
Sprinkle 1/2 cup of crumbled feta cheese evenly over the eggs.
Cook the omelette for about 3-4 minutes until the edges start to set. You can gently lift the edges with a spatula to allow uncooked egg to flow underneath.
Once the omelette is mostly set, carefully fold it in half using a spatula. Cook for an additional 1-2 minutes until fully cooked through.
Slide the omelette onto a plate, cut in half if desired, and serve hot. Enjoy your Spinach and Feta Omelette!
