Bring a large pot of water to a boil. Add 200 grams of pasta and cook according to package instructions until al dente.
While the pasta is cooking, chop 1/2 cup of jarred peppers and set aside.
In a saucepan over medium heat, add 1 cup of broth and 1 cup of salsa. Stir well and let it simmer for 5 minutes.
Add the chopped peppers and 1 cup of canned vegetables to the salsa mix. Season with 1 tablespoon of hot sauce, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir and cook for another 5 minutes.
In a separate small pan, add 2 tablespoons of peanut butter and 5 crushed crackers. Toast gently over low heat until the mixture becomes crumbly and golden brown. This will be your crunchy topping.
Drain the pasta and add it to the saucepan with the salsa and vegetable mixture. Stir well to combine all ingredients and allow the flavors to meld together over low heat for 2-3 minutes.
Serve the pasta in bowls, topped with the peanut butter cracker crumble. Enjoy your meal!
