Preheat the oven to 375°F (190°C).
Peel and thinly slice the potatoes into 1/4 inch rounds.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork tenderloin (cut into bite-sized pieces) and season with salt, black pepper, and paprika. Cook until browned, about 5-7 minutes.
Remove the pork from the pan and set aside. In the same skillet, add the remaining oil and sauté the chopped onion and minced garlic until translucent, about 3 minutes.
Arrange half of the potato slices at the bottom of a casserole dish. Layer half of the sautéed onions and garlic over the potatoes.
Place the browned pork pieces over the onion and potato layer.
Add the rest of the potatoes on top of the pork. Finish with the remaining onions and garlic.
Pour the chicken broth evenly over the entire casserole. Sprinkle dried thyme and more black pepper on top.
Cover the casserole dish with aluminum foil and bake in the preheated oven for 35-40 minutes, or until potatoes are tender.
Remove the foil and bake for an additional 10 minutes, or until the top is slightly browned and crispy.
Garnish with freshly chopped parsley before serving.
