In a frying pan, heat 1 tablespoon of olive oil over medium heat.
Add 1 cup of spinach to the pan and sauté for about 2-3 minutes until wilted.
While the spinach is cooking, crack 4 eggs into a bowl and whisk until well combined. Season with salt and pepper to taste.
Once the spinach has wilted, pour the whisked eggs over the spinach in the pan.
Crumble 50g of feta cheese evenly over the egg and spinach mixture.
Cook for about 4-5 minutes, or until the edges begin to set. You can push the edges gently with a spatula to help the uncooked egg flow to the edges.
Once the eggs are mostly set, carefully fold the omelette in half and let it cook for another minute to ensure the inside is fully cooked.
Slide the omelette onto a plate and cut it in half if desired. Serve warm, garnished with additional pepper if wanted.
