In a large bowl, combine the flour, sugar, baking powder, and salt. Mix well to ensure all ingredients are evenly distributed.
Melt the butter in a small saucepan over low heat or in the microwave. Set aside to cool slightly.
In another bowl, whisk together the eggs until fluffy. Add the milk, melted butter, and vanilla extract, and continue whisking until combined.
Make a well in the center of the dry ingredients, and pour in the wet ingredients. Stir gently with a wooden spoon or spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook on the other side until golden brown, about 2 minutes more.
Serve warm with butter and syrup, or your choice of toppings.
