Ingredients

  • 1 can (about 400g) Canned chickpeas (drained)
  • 1 medium (about 150g) Avocado
  • 200 g Cherry tomatoes
  • 1 medium (about 150g) Cucumber
  • 1/4 cup Cilantro
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Rinse and drain the canned chickpeas thoroughly. Place them in a large mixing bowl.

Cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado into bite-sized pieces and add them to the bowl with the chickpeas.

Halve the cherry tomatoes and add them to the mixing bowl.

Peel the cucumber, if desired, and dice it into small cubes. Add the cucumber to the bowl.

Chop the cilantro finely and add it to the bowl.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the dressing.

Pour the lemon juice dressing over the chickpea and vegetable mixture. Toss everything gently to combine, ensuring the avocado is not mashed.

Taste and adjust the seasoning if needed. Serve the salad immediately or chill it in the refrigerator for 30 minutes before serving.
