A bright, satisfying Mediterranean-inspired salad that balances warm, smoky grilled chicken and tender chickpeas with creamy avocado, crisp cucumber and sweet cherry tomatoes. Fresh lemon-olive dressing and parsley lift the flavors while contrasting textures—silky avocado, crunchy greens, and a slight bite from red onion—make every forkful feel restaurant-quality.
Prepare the components and mise en place. Slice the grilled chicken into even bite-sized strips so they heat uniformly and sit nicely on the salad.
