Bright, herb-forward and satisfying, this Mediterranean Lemon‑Herb Grilled Chicken & Quinoa Salad pairs juicy, lemon‑marinated grilled chicken with nutty quinoa, crisp cucumber, sweet cherry tomatoes and tangy feta. Texturally balanced and dressed with a simple lemon‑olive vinaigrette, it’s elegant enough for guests yet simple enough for weeknight cooking — refreshing, protein-packed, and full of sunny citrus and herb aromas.
Toast and cook the quinoa: Rinse 1 cup dry quinoa thoroughly under cold water to remove the bitter saponin coating (this improves flavor and prevents bitterness). Drain.
