Bright, herb-scented and wildly textural, these open-faced flatbreads pair a lemony, za'atar-spiced smashed chickpea spread with creamy mashed avocado, juicy cherry tomatoes and a finish of fresh mint, parsley and tart sumac. The contrast of crunchy warmed gluten-free flatbread, silky avocado and toothsome chickpeas makes this an easy, restaurant-quality small-plate or light meal with Mediterranean flair.
Warm the flatbreads: Heat a dry skillet over medium for 30–60 seconds per side, or wrap flatbreads in a damp paper towel and microwave 20–30 seconds. Warming makes the flatbread pliable (so it won’t crack) and releases toasty aromas — it’s a simple step that elevates the eating experience.
Prepare the chickpea smash: Place the drained chickpeas in a medium bowl. Add 2 tbsp (all) lemon juice, 3 tsp za'atar (reserve 1 tsp for finishing), a pinch of sea salt and 1 tsp olive oil. Using a fork or potato masher, smash the chickpeas to a coarse texture — leave some whole beans for toothsome contrast. Crushing by hand (not blitzing) keeps texture and prevents gummy paste; the lemon brightens and lifts the beans' earthiness.
Season and adjust the chickpea mix: Taste and add salt or the reserved za'atar if you like a more herb-forward flavor. If the mixture feels dry, add 1–2 tsp water or another drizzle of olive oil — you want a spoonable but not soupy consistency so it spreads cleanly on the flatbread.

Assemble each flatbread: Spread about 110 g of the chickpea smash across each warmed flatbread, leaving a 1 cm border. Dollop or spread the mashed avocado (about 1/2 medium avocado worth) on top of the chickpeas — layering keeps the avocado from slipping off and creates visual contrast.
Top and finish: Scatter the herbed cherry tomatoes over the avocado, then sprinkle the remaining 1 tsp za'atar across all 4 flatbreads. Finish each with a light drizzle (about 1 tsp) of extra-virgin olive oil, a pinch of sea salt and a small dusting of sumac for tart, lemony lift. Sumac brightens the whole plate and za'atar adds an earthy sesame-herb note.

Make-ahead and storage note: If making components ahead, keep the mashed avocado tightly covered with plastic pressed to the surface and refrigerate up to 24 hours; keep the chickpea smash refrigerated in an airtight container up to 3 days. Warm flatbreads just before assembling.
