Ingredients

  • 8 ounces whole wheat pasta
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli (cut into florets)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Parmesan cheese (grated)

Instructions

Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon olive oil. Add the sliced bell peppers and broccoli florets. Sauté for about 4-5 minutes, or until they start becoming tender.

Add the halved cherry tomatoes to the skillet and continue to cook for another 2 minutes until the tomatoes are slightly softened.

Add the cooked pasta to the skillet with the vegetables. Toss everything to combine well, adding additional salt and pepper to taste.

Stir in the Parmesan cheese and cook for another minute until the cheese is slightly melted and the pasta is well-coated.

Serve the pasta primavera on plates, topping with the grilled shrimp. Garnish with extra Parmesan if desired.
