Press the tofu if needed to remove excess water. Pat dry with paper towels and cut into cubes.
Heat olive oil in a non-stick pan over medium heat.
Add the cubed tofu to the pan. Cook for about 5-7 minutes, turning occasionally until the tofu is golden brown on all sides.
Add the mixed vegetables to the pan. Stir-fry for about 3 minutes, or until the vegetables begin to soften.
Add soy sauce to the pan and toss everything to coat evenly. Cook for another 2 minutes, letting the flavors meld together.
Remove from heat and serve the stir-fried tofu and vegetables over the cooked brown rice.
