Ingredients

  • 14 oz firm tofu
  • 2 cups mixed vegetables
  • 2 cups cooked rice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Drain and press the tofu to remove excess water, then cut it into cubes.

Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.

In the same skillet, add the remaining 1 tbsp of olive oil. Add minced garlic and ginger, and sauté for 1 minute until fragrant.

Add the mixed vegetables to the skillet. Stir-fry for about 5-7 minutes until they are tender-crisp.

Return the tofu to the skillet with the vegetables. Add the soy sauce, sesame oil, salt, and black pepper. Stir well to combine everything evenly.

Add the cooked rice to the skillet and gently mix everything together until the rice is well coated and heated through, about 3 minutes.

Taste and adjust seasoning if necessary. Serve hot and enjoy your Stir-Fried Tofu with Vegetables and Rice.
