Wash the fresh spinach under cold running water and thoroughly drain it. If the leaves are large, you may want to chop them coarsely. Set aside.
In a mixing bowl, crack the 4 eggs and beat them until the yolks and whites are well combined. Season with salt and pepper to taste.
Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the spinach and sauté for about 2 minutes until wilted.
Pour the beaten eggs evenly over the wilted spinach, tilting the pan to ensure even distribution. Cook for about 2-3 minutes until the edges begin to set.
Sprinkle the feta cheese over one half of the omelette. Allow the omelette to cook for another 2-3 minutes until the eggs are fully set but still slightly soft in the center.
Using a spatula, carefully fold the omelette in half, covering the feta cheese. Cook for an additional minute to ensure the cheese melts slightly.
Slide the omelette onto a plate and serve immediately, garnished with extra pepper if desired.
