Preheat grill or grill pan over medium heat.
In a large bowl, combine ground lamb, 1 tsp ground cumin, 1 tsp ground coriander, 2 minced garlic cloves, parsley, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
Shape the lamb mixture into 8 oval patties (koftas).
Place the koftas on the preheated grill and cook for 6-8 minutes per side or until fully cooked to your liking.
While the koftas are grilling, chop the zucchini, bell pepper, and red onion into bite-sized pieces.
Toss the chopped vegetables with olive oil, remaining minced garlic clove, 1 tsp cumin, 1 tsp coriander, salt, and pepper.
Spread the vegetables on a baking sheet and roast in the oven at 400°F (200°C) for about 20 minutes, or until tender and slightly charred.
In a small bowl, whisk together Greek yogurt, tahini, a pinch of salt, and pepper until smooth.
Serve the grilled lamb kofta with couscous, roasted vegetables, and a generous dollop of tahini-yogurt sauce on the side.
