In a medium bowl, mix the unsweetened coconut yogurt with the optional maple syrup for added sweetness. Adjust the sweetness to your preference.
Prepare the mixed fruits by washing and slicing the berries and bananas. Set aside.
In serving glasses or bowls, spoon a layer of coconut yogurt at the bottom (about 1/2 cup per glass).
Add a layer of gluten-free muesli (about 1/4 cup per glass) over the yogurt.
Add a layer of mixed fruit (about 1/2 cup per glass), distributing the different fruits evenly between servings.
Repeat the layers with another scoop of coconut yogurt, followed by muesli, and finally another layer of mixed fruit.
Top each serving with a sprinkle of sliced almonds (approximately 1 tablespoon per serving) for added crunch.
Optionally, drizzle a small amount of maple syrup over the top for extra sweetness, if desired.
Serve immediately or chill in the refrigerator for up to an hour to allow the flavors to meld.
