Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the diced cooked potato or hash browns to the skillet and cook for an additional 5 minutes until slightly crispy. Remove from heat and set aside.
In a separate bowl, whisk the eggs together with salt and pepper. Heat the remaining 1 tablespoon of oil in another pan over medium heat and scramble the eggs until just cooked through, about 2-3 minutes.
Warm the flour tortillas in a skillet or microwave for 30 seconds until pliable.
Distribute the cooked potatoes, scrambled eggs, and shredded cheddar evenly among the tortillas. If using, slice the avocado and add to each tortilla.
Top each tortilla with a spoonful of salsa and optional avocado slices, then roll each tortilla into a burrito by folding the sides in and rolling from bottom to top.
Serve the breakfast burritos warm, possibly with additional salsa on the side.
