Ingredients

  • 3 units Large eggs
  • 1/2 cup Black beans
  • 2 units Whole-wheat tortilla
  • 1/2 cup Cheddar or Monterey Jack cheese
  • 1/4 cup Salsa
  • 1/2 unit Avocado (optional)
  • 1 tbsp Olive oil or butter

Instructions

Heat 1 tablespoon olive oil or butter in a non-stick skillet over medium heat.

In a bowl, whisk the 3 large eggs until well beaten. Add a pinch of salt and pepper.

Pour the eggs into the skillet and cook, stirring occasionally, until they are scrambled to your liking. Remove from heat.

In a small saucepan, warm the 1/2 cup of black beans over low heat, stirring occasionally.

Warm the whole-wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Lay each tortilla flat and evenly distribute the scrambled eggs over the center. Top with warm black beans, 1/4 cup salsa, 1/2 cup shredded cheese, and slices of 1/2 avocado (if using).

Fold both sides of the tortilla over the filling and then roll it from the bottom up to create a burrito. Ensure the seam side is down to keep it closed.

If desired, return the burrito to the skillet, seam side down, and cook over medium heat for 2-3 minutes until slightly crispy.

Serve the burritos immediately, optionally garnished with additional salsa or avocado slices.
