Ingredients

  • 4 units Large eggs
  • 1 cup Black beans
  • 2 units Whole-wheat tortillas
  • 1/2 cup Cheddar cheese
  • 1/2 cup Salsa
  • 1/2 units Avocado
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Milk (optional)

Instructions

In a small bowl, whisk the large eggs with salt, black pepper, and milk (if using) until well combined.

Heat olive oil in a non-stick skillet over medium heat. Add the whisked eggs and gently scramble until they are just set. Remove from heat.

In a separate skillet, warm the black beans over low heat until heated through. Season with a little salt if necessary. Set aside.

Lay the whole-wheat tortillas flat on a clean surface. Evenly distribute the scrambled eggs over the center of each tortilla.

Top the eggs with black beans, a sprinkle of cheddar cheese, a spoonful of salsa, and slices of avocado.

Fold in the sides of each tortilla and then roll them up to form burritos.

Heat a clean, dry skillet over medium heat. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until they are golden brown and crispy.

Remove from the skillet and let them cool slightly before serving. Slice in half if desired. Serve immediately with extra salsa on the side.
