Ingredients

  • 6 pieces large eggs
  • 2 cups diced potato or hash browns
  • 6 pieces whole-wheat tortillas
  • 3/4 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

Heat the olive oil in a large skillet over medium heat.

Add the diced potatoes or hash browns to the skillet. Cook and stir occasionally until the potatoes are golden brown and crispy, about 8-10 minutes. Season with a pinch of salt and pepper. Remove from skillet and set aside.

In a bowl, crack the eggs. Add 1/2 tsp salt and 1/4 tsp pepper. Beat the eggs until they are well scrambled.

In the same skillet, reduce heat to medium-low and add the beaten eggs. Cook gently, stirring occasionally, until just set and scrambled, about 5 minutes.

Lay each whole-wheat tortilla flat and evenly distribute the scrambled eggs, cooked potatoes, and shredded cheddar cheese among them.

Top each with a generous spoonful of salsa.

Roll up each tortilla burrito-style by folding in the sides and then rolling from the bottom upwards. Ensure they are tightly packed.

Optional: Warm the burritos in a dry skillet over medium heat for 1-2 minutes per side until the tortillas are slightly crispy.
